Fresh hop season doesn’t wait around.
For the first of our two fresh hop beers this year, we’re starting with a classic: Cascade. Only this Cascade didn’t travel halfway around the world to get here. It was grown on Dutch soil by BrabantHop.
Cascade is known for grapefruit, orange and floral citrus. But using it fresh, straight from the harvest, brings out another side too. Greener, livelier and with that unmistakable freshly picked hop character you simply don’t get from dried pellets.
So naturally, we used 300 kilos of it.
Underneath all that fresh hop is a White IPA base. Pilsner malt keeps things light, plenty of wheat gives it a soft body and Belgian Wit yeast adds a subtle spicy edge. Cascade goes into the kettle and whirlpool first, before that enormous fresh-hop addition takes over during fermentation.
Grapefruit. Orange peel. Flowers. Fresh green hop. A little spice from the yeast.
Hop harvest in a glass. And you only really get one shot at it each year.
What to Expect
Appearance: Pale golden with a natural haze and thick white foam
Aroma: Grapefruit, orange peel, floral citrus and freshly picked green hop
Flavor & Mouthfeel: Bright citrus and fresh hop character over a soft wheat body, with subtle yeast spice and a crisp, dry, pleasantly bitter finish
