Fresh hop season, round two.
After letting Cascade loose in our White IPA, we’re going bigger. This time it’s Centennial. Freshly harvested in Brabant and thrown into a proper Double IPA while the season lasts.
Centennial is one of those hops that helped define American IPA in the first place. Citrus, flowers, pine and resin, with some tropical fruit underneath. It’s sometimes called “Super Cascade”, which feels particularly appropriate after our first fresh-hop release.
And we’ve given it plenty of room to show off.
The beer itself is deliberately simple: Pilsner malt, a touch of wheat and clean US-05 fermentation. Centennial brings the flavour in the kettle and whirlpool, while Magnum quietly takes care of part of the bitterness.
Then come 300 kilos of fresh Centennial.
Straight into the beer after harvest, bringing that green, vivid fresh-hop character you only get during this tiny window of the year.
Big citrus. Pine. Fresh flowers. Resin. Green hop. Firm bitterness.
The first one was fresh.
This one’s fresh with teeth.
What to Expect
Appearance: Bright pale gold with a sturdy white head
Aroma: Lemon and orange citrus, floral hop, pine and freshly picked green hop
Flavor & Mouthfeel: Bold citrus and resinous hop character with pine, subtle tropical fruit and a distinctly fresh green edge. Clean malt underneath with a firm, dry bitterness

HOPS: Fresh Centennial from BrabantHop
YEAST: SafAle US-05
The recipe uses Centennial in the boil and whirlpool before 300 kg of fresh Centennial goes into secondary. Hallertau Magnum is there primarily to build clean bitterness without stealing the spotlight.
